Weiss

Max Weiss senior founded the company in 1925 as a fine bakery and food works in Neu-Ulm on the Danube. His son Max Weiss junior took over in 1954, expanded the bakery and in 1961 bought the Nuremberg gingerbread maker Ferdinand Wolff, adding Nuremberg Oblaten-Lebkuchen to the Swabian range.

In 1965 Max Weiss patented an automatic Lebkuchen spreading machine, and in the mid 1970s the bakery moved to its current site in Junkersstrasse in Neu-Ulm Schwaighofen. The brand became known for soft brown Lebkuchen hearts with apricot fruit filling under chocolate.

Since 1994 Weiss has belonged to the Lambertz group from Aachen, which keeps the Weiss name, logo and Neu-Ulm bakery. The Neu-Ulm site is the largest production facility in the group, baking more than 30,000 tonnes a year including around 450 million individual Lebkuchen hearts, and celebrated 100 years in September 2025.
